Dry zucchini
Place cut zucchini on a platter lined with paper towels and pat dry.

Prepare coating stations
Place beaten eggs in a shallow bowl. In another shallow bowl, combine panko, cornmeal, Parmesan, oregano, garlic powder, and a large pinch of crushed red pepper flakes. Season with salt and pepper.

Working one at a time, dip zucchini rounds into egg, then into panko mixture, pressing to coat.

Working in batches as needed, place zucchini in an even layer and cook at 400°F for 18 minutes, flipping halfway through.
