
Roasted Curry Sweet Potato Cubes

Preheat oven
Preheat the oven to 400°F. Line a baking sheet with parchment paper.

Prepare sweet potatoes
Wash and clean the sweet potato. Pat dry using a kitchen towel. Peel them and slice off both edges.

Cut into strips
Cut the sweet potato in half. Place it vertically on the board and cut it into three parts of about ½ inch thickness.

Cube the potatoes
Cut each part into ½ inch cubes. Repeat with the rest of the sweet potato.

Season
Transfer the sweet potato cubes to a large bowl. Add the olive oil, curry powder, garlic powder, and salt. Toss them well making sure all the cubes are well coated.

Arrange on baking sheet
Place the cubes on the baking sheet and spread them in a single layer. Do not overcrowd the tray.

Roast
Bake in preheated oven for 30-35 minutes or until the cubes are well-cooked and slightly caramelized.
