Instructions
- 1
Cook pasta
Cook the spaghetti according to package directions.
- 2
Heat oil and garlic
In a large pan, heat oil and add garlic to flavor it.
- 3
Saute ingredients
Mix in the tomatoes, parsley, basil, lemon juice, salt, and pepper to saute lightly. Don't overcook tomatoes or they will become mushy; one minute is plenty.
- 4
Toss with pasta
When done, mix and toss the sauce into the freshly cooked spaghetti.
- 5
Add cheese and serve
Immediately sprinkle with Parmesan cheese so the heat of the noodles will cause it to melt. Add more salt and pepper to taste. Optional: top with lightly roasted pine nuts or substitute lime juice for lemon for a more tart taste.
Cook's Notes
For a wine, Pavarotti recommends Brunello di Montalcino. This pasta dish has a very fresh taste. Excellent with side dishes of vegetables and a hearty bread.
