
One-Pot Shrimp Pasta with Spinach and Feta
A quick one-pot Mediterranean-inspired shrimp pasta with cherry tomatoes, Kalamata olives, spinach, and feta. Fresh lemon and herbs brighten this easy weeknight dinner.

Instructions
Cook the Shrimp

Heat skillet
Set a skillet on HIGH heat. Once hot, spray with a little oil.

Sear shrimp
Add the shrimp and let sear for 2-3 minutes without stirring.

Finish cooking shrimp
Mix the shrimp in the skillet so that it cooks through, about 5 to 7 minutes total. Remove the shrimp from the skillet and set aside.
Cook the Pasta

Add pasta ingredients
Set the skillet on medium high heat, then add the pasta, cherry tomatoes, Kalamata olives, lemon zest, Italian seasoning, olive oil, salt, pepper, and water (or broth). Do not add the spinach yet.

Simmer pasta
Bring the pot to a simmer and continuously stir and fold the pasta using tongs, ensuring it is not sticking.

Reduce heat
Once nearly all the water has been absorbed and the pasta has been cooked, reduce the heat to low.
Combine and Serve

Add spinach and shrimp
Add the spinach and cooked shrimp to the pasta and fold until the spinach wilts into the pasta.

Season and serve
Season to taste with sea salt, pepper and fresh lemon juice. Enjoy this pasta hot or cold. Garnish individual servings with feta if you'd like.
