
Mike's Shrimp Dip
A rich and creamy shrimp dip made with cream cheese, green onions, and fresh herbs. Perfect for entertaining with a smooth, luxurious texture.

Cream the cheese
In a food processor, cream the cream cheese until smooth.

Add aromatics
Add the five cleaned green onions with stems and garlic if using.

Add shrimp
Add shrimp to the food processor.

Add citrus
Add the lemon zest and/or juice.

Add herbs and seasonings
Add chopped parsley and seasonings to taste.

Process
Puree everything until smooth.

Add texture
For texture, stir in bits of succulent grilled shrimp and some capers.
Cook's Notes
Bronwyn Maris used 1 cup sour cream on this dip, but I think it may make it too liquid. I did try to jazz it up with ground parmesan cheese once -- mistake. It ruined the smooth texture of the dip. Adding sour cream to this mix will gradually liquify it if you prefer a less 'stiff' dip. For more complex flavor, substitute or add Piri Piri shrimp. Alternative version: use 2 Tbsp yellow mustard, 2 tsp EVOO, large dollop of sour cream, salt and pepper to taste, lemon zest/juice, grated celery, and canned shrimp.
