
All-in-One Cake & Frosting
A clever bundt cake recipe where the frosting doubles as the cake base. Rich cream cheese frosting is divided—part becomes the moist cake batter, part tops the finished dessert.

Instructions
Prepare Pan and Frosting

Preheat oven
Preheat oven to 350°F.

Prepare pan
Grease and flour a bundt baking pan, preferably non-stick.

Beat cream cheese mixture
In large mixing bowl, beat cream cheese, butter and vanilla extract at medium speed until smooth.

Add sugar and milk
Add powdered or confectioners' sugar alternately with milk, beating 1-2 minutes or until blended.

Reserve frosting
Remove just 2 1/2 cups of frosting from bowl, placing into a plastic sealable bag, and set aside.
Make the Cake

Add eggs
With mixer at slow speed, add eggs to remaining frosting in mixing bowl. Beat until blended.

Combine dry ingredients
In separate bowl, combine flour, baking powder and salt.

Mix batter
Add flour mixture to frosting mixture alternately with water and continue beating 1-2 minutes or until well blended.

Bake
Pour into pan and bake 65-70 minutes or until toothpick inserted in center comes out clean.

Cool in pan
Cool 30 minutes.
Frost and Serve

Loosen cake
While cake is still warm, use a knife to loosen the cake from the sides of the pan.

Remove from pan
Cool completely before removing from pan.

Frost cake
Place cake on serving plate and top with remaining icing.
Cook's Notes
Cut one edge of the plastic bag, and squeeze the frosting out in a circular motion on top of your cake. The frosting will begin to descend and cover the sides of your cake.
