
Air Fryer Cornflake Chicken Tenders
Crispy air-fried chicken tenders coated in seasoned cornflakes. Customize with your favorite spice blend for a healthier alternative to deep-fried chicken.

Instructions
Marinate the Chicken
- 1
Prepare marinade
Place chicken in large ziplock bag. Combine mayonnaise and about 1/3 of the seasonings and add to chicken.

Marinate
Manually mix to coat chicken, and let marinate 30-90 minutes.
Prepare Coating Stations

Crush cornflakes
Put cornflakes in large ziplock bag and crush firmly with underside of a skillet. Don't pulverize though (not a powder—you will want some residual texture).

Season cornflakes
Add some salt and pepper to the crushed cornflakes. Mix together well and place in a cake tin.

Prepare egg wash
Place beaten eggs in a separate bowl for dunking.

Prepare flour mixture
Combine flour and remaining 2/3 seasoning and place in a separate cake tin for coating.
Bread and Cook

Preheat air fryer
Pre-heat Air Fryer to 400°F. PAM spray tray.

Bread chicken
Wearing latex gloves, take each piece of chicken first to the flour mixture, then through egg dunk, then again through flour mixture to create a glue, then to cornflakes, pressing flakes on as much as possible.

Arrange in air fryer
Place pieces in a single layer in the air fryer. Spray top surfaces with avocado oil spray or olive oil spray.

Air fry
Air fry for 20 minutes at 400°F, or 30 minutes at 375°F, or until chicken reaches minimum 165°F and is no longer pink in the center.
Cook's Notes
Be daring on the seasonings. Feel free to invent alternatives. Sometimes I substitute Cajun Seasoning, Creole Seasoning, Greek Seasoning, Vendaloo Curry Seasonings. The oil sprays help the result become super crispy, as if deep fried in oil. Don't worry about measurements above. Those are approximations and you can easily eyeball your concoction. You're not baking a cake. Measurements matter much less here.
