Instructions
Marinate the Chicken (Optional)

Prepare marinade
Place the chicken in a sealable plastic bag or large bowl with the soy sauce, chicken seasoning, BBQ seasoning, and salt and pepper to taste. Marinating is preferred but not required.

Coat chicken
Shake the bag to ensure the chicken is evenly coated with seasoning. If using a bowl, cover the bowl.

Marinate
Marinate for at least one hour to overnight in the refrigerator for best results.
Assemble the Kebabs

Thread chicken
Remove the chicken and thread it onto a skewer. Your hands will get very messy during this process. You may want to have a towel close by to wipe your hands.

Add vegetables
Layer the chicken with the peppers, zucchini, and onions. Top each skewer with a grape tomato at the top. Note: You can add the tomato after cooking if you prefer it firmer, or if it makes the skewers too tall for your air fryer.

Spray with oil
Spray the chicken and veggies with cooking oil (olive oil recommended). This is optional and yields juicy chicken.
Air Fry the Kebabs

Prepare air fryer
Line the air fryer with parchment paper liners for easy clean up.

Initial cook
Place the skewers on a grill rack in the air fryer basket. Cook for 10 minutes at 350°F.

Flip and finish
Open the air fryer and flip the skewers. Cook for an additional 7-10 minutes until the chicken reaches an internal temperature of 165°F.

Check temperature
Use a meat thermometer to test the inside of one of the pieces of chicken to ensure it has reached 165°F.
Cook's Notes
For extra juicy chicken, marinate overnight in the refrigerator. The grape tomatoes can be added after cooking if you prefer them firmer, or cook them on the skewers for a softer texture. Parchment paper liners make cleanup easier.
