Prepare coating stations
Combine panko, Parmesan, oil and lemon zest in a shallow dish. Pour buttermilk into another shallow dish.

Preheat air fryer
Preheat air fryer to 375°F for 5 minutes. Coat the basket with cooking spray.

Season chicken
Sprinkle chicken with salt and pepper.

Coat in buttermilk
Dredge chicken in the buttermilk, letting excess run off.

Coat in panko mixture
Dredge in the panko mixture, pressing to adhere.

Air fry
Place in the basket, in batches if necessary, and cook until golden brown and a thermometer inserted in the thickest part reaches 165°F, about 5 minutes on each side.
Cook's Notes
Be sure to remove skin from chicken so you don't waste all the seasoning in the dry ingredients when you're eating it.
