Instructions
Blanch the Broccoli

Prepare broccoli
Wash and cut the broccoli into medium-sized florets, keeping them approximately the same size.

Boil broccoli
Bring water to boil in a medium saucepan, then add some salt, followed by the broccoli florets. Boil for one minute.

Prepare ice bath
Make ice bath in a wide bowl with ice cubes and water.

Shock and drain
After one minute, remove the broccoli from the boiling water and immediately transfer it to the ice water. Once it cools down, drain the water and pat dry the florets using a clean kitchen towel or paper towels.
Marinate the Broccoli

Mix marinade
In a large bowl, combine yogurt, heavy cream, mozzarella cheese, ginger garlic paste, kasuri methi, besan, garam masala, ground cardamom, sugar, salt, and pepper. Mix well, making sure there are no lumps or dry bits of spices.

Coat broccoli
Add the blanched broccoli to the marinade and mix well, making sure the florets are coated well.

Refrigerate
Cover and let it marinate in the refrigerator for 15-20 minutes.
Air Fry

Preheat air fryer
Preheat the air fryer to 360°F. Brush oil in the air fryer basket.

Arrange broccoli
Place broccoli into air fryer basket in single layer. Do it in batches if necessary.

Air fry
Air fry at 360°F for 11-12 minutes or until the broccoli is tender and the edges are golden brown.

Serve
Serve hot with dipping sauce of your choice.
