Wash and dry potatoes
Start by washing and scrubbing to get any dirt off the sweet potatoes. Pat them dry using a kitchen towel. A dry exterior will help them crisp up better.

Season potatoes
Drizzle olive oil over the potatoes and rub it onto the entire exterior. Sprinkle with salt and black pepper. The oil is necessary to make sure the skin crisps up and doesn't dry out. You can also spray the potatoes with cooking oil if you prefer.

Arrange in air fryer
Place the sweet potatoes in the air fryer basket. If cooking more than 2 potatoes, make sure they all fit in the base without too much overlapping. This will ensure they get nice and crispy and evenly cooked.

Cook and flip
Cook the potatoes for 45 minutes at 390°F (200°C). Flip them over halfway through cooking.

Check doneness
After 45 minutes, squeeze the potato. If it gives easily and feels a bit squishy, it's done. If it's firm at all, continue cooking for 5 more minutes.
Cook's Notes
Scrubbing the sweet potatoes is necessary to remove dirt. Choose same-sized sweet potatoes so they all cook at the same rate. For a sweet variation, season with cinnamon, brown sugar, and maple syrup. Wrap leftover baked sweet potatoes and refrigerate for up to 4 days, or freeze for up to 3 months. To reheat, cook in the air fryer for 5-10 minutes at 390°F until hot.
