Brown the sausages
Place stainless steel skillet over medium heat and add the oil and sausages. Gently heat the sausages about 2 1/2 minutes per side until they are nice brown color on both sides. Blot away any excess fat.

Steam with grapes and onion
To skillet, add the grapes and onion and 1/4 cup water. Place a lid over the skillet and steam/simmer for about 10 minutes until interior heat of sausage is between 160 and 165°F.

Remove sausages
Remove sausage from pan by placing on paper towels and tenting with aluminum foil.

Season the mixture
In the skillet, season the onions and grapes with black pepper and salt, stirring all together.

Begin caramelizing
Spread onion and grape mix into a single layer in the pan and allow to simmer, uncovered and untouched, for 3 to 5 minutes.

Finish caramelizing
When onions begin to turn brown, start stirring to caramelize all sides. Liquid will evaporate in another 3 to 5 minutes.

Add wine and vinegar
Reduce heat to medium and add white wine and oregano, leaving it reduce again, and then finishing with balsamic vinegar.

Serve
To serve, ladle the onion mix atop the sausages and sprinkle all with chopped fresh mint.
