Instructions
Prepare the Crust

Mix crust ingredients
Combine the graham cracker crumbs, melted butter, and sugar.

Prepare pan
Wrap aluminum foil tightly around the bottom of a springform pan that's been sprayed with nonstick cooking spray.

Press crust
Press the crumb mixture into the bottom and up the sides of the pan.
Make the Filling

Beat cream cheese
Using an electric mixer, beat the cream cheese until smooth.

Add condensed milk
Add the sweetened condensed milk and beat until combined.

Add egg yolks
Add the egg yolks and beat until fully combined and smooth.

Whip egg whites
Beat the egg whites until stiff peaks form, about 5 minutes.

Fold egg whites
Fold the egg whites into the cream cheese mixture.
Bake and Cool

Pour batter
Pour the batter into the prepared pan.

Create water bath
Set the pan inside a larger baking pan. Pour hot water into the pan until it's about 1/3 of the way up the sides of the springform pan to create a water bath.

Bake
Bake in a preheated 325°F oven for about 50 minutes.

Cool in oven
Turn off the oven and let the cheesecake remain there for about 1 hour.

Refrigerate
Cool completely before refrigerating to chill completely.
Cook's Notes
The filling uses just three ingredients for an incredibly easy cheesecake. You can customize the crust with graham crackers or any cookie (shortbread, pumpkin, molasses, chocolate). Top with pumpkin spice caramel sauce, fresh fruit, or whipped cream for extra flair.
